Halfmoon Roasting Lab started with a simple idea: great coffee deserves to be understood, carefully roasted, and shared with others.
My journey into coffee began as a passion for discovering local coffee shops, learning different brewing methods, and understanding what makes one cup stand out from another. The more I learned about coffee, the more I became interested in what happens before the brewing process even begins — the roast.
That curiosity eventually turned into Halfmoon Roasting Lab.
The name reflects where this journey began: Halfmoon, New York, right here in the Capital Region. The word “Lab” represents the way I approach roasting. Every coffee is an opportunity to test, learn, refine, and find the roast profile that brings out the best characteristics of the bean.
At Halfmoon Roasting Lab, the goal isn’t to mass-produce coffee. It’s to roast in small batches with attention to detail, consistency, and flavor. Different origins, processing methods, and roast levels all require a different approach, and that process of dialing in each coffee is what makes roasting exciting.
I’m still constantly learning, experimenting, tasting, and improving — and that is exactly what I want Halfmoon Roasting Lab to represent.
